Combine Ingredients
In a cocktail shaker, combine rye whiskey, amaretto, lacto-fermented plum purée, sugar, lemon juice, and egg white.

Dry Shake
Perform a dry shake (shake without ice) for about 15 seconds to emulsify the egg white.

Shake with Ice
Add ice to the shaker and shake vigorously for another 15-20 seconds until well chilled.

Strain
Strain the cocktail into a chilled coupe or cocktail glass.

Add Bitters and Nutmeg
Add pimento bitters on top and grate fresh nutmeg over the drink as a garnish.
