Prepare Chicken

Season the chicken breasts with salt and black pepper. Set aside.

Set up Breading Station

In three separate bowls, place flour, beaten eggs, and panko breadcrumbs. Dip each chicken breast first in flour, then in eggs, and finally coat with panko breadcrumbs.

Cooking

Fry Chicken

In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded chicken breasts until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Assembly

Prepare Cucumber Ribbons

Using a vegetable peeler, slice the cucumber lengthwise into thin ribbons.

Make Spicy Mayo

In a small bowl, mix mayonnaise and sriracha sauce to create spicy mayo.

Plate the Dish

On a serving plate, place the fried chicken, drizzle hoisin sauce over it, add cucumber ribbons and spicy mayo on the side, and top with microgreens.
