Preparation

Prepare the Beef

Finely dice the beef tenderloin into small cubes and place in a mixing bowl.

Mix the Ingredients

Add the chopped green onion, Kewpie mayo, toasted sesame oil, and pickled chilli to the bowl with the beef. Mix well until all ingredients are combined.

Prepare the Daikon

Julienne the daikon radish into thin strips and set aside.

Prepare the Peppers

Finely dice the brunoise peppers and set aside.

Prepare Wontons

In a frying pan, lightly fry the wonton wrappers until golden brown and crispy. Set aside to cool.

Assembly

Plate the Tartare

On a serving plate, place a ring mold (optional) and fill it with the beef mixture. Gently press down to shape. Remove the mold.

Add Garnishes

Garnish the beef tartare with the julienned daikon, diced brunoise peppers, and additional pickled chilli if desired.

Serve with Wontons

Serve the beef tartare with the crispy wonton wrappers on the side for dipping.
