    Cook the potatoes

    Place the peeled, chopped Yukon Gold potatoes in a large pot and cover with cold salted water by about 2 cm. Bring to a gentle boil over medium-high heat, then reduce to a simmer and cook until potatoes are very tender and easily pierced with a fork, about 15–20 minutes depending on size.

    Warm dairy

    While potatoes cook, gently heat the milk and butter together in a small saucepan just until butter melts and milk is warm (do not boil). Keep warm.

    Dry and mash

    Drain the potatoes thoroughly in a colander and return them to the still-warm pot off the heat for 1–2 minutes to allow excess moisture to evaporate. Pass the potatoes through a ricer or fine food mill back into the pot or a bowl for the smoothest texture.

    Enrich the mash

    Fold the warm milk-butter mixture and the softened cream cheese into the riced potatoes. Season with the fine sea salt and white pepper. Taste and adjust seasoning; the mixture should be creamy and slightly seasoned because the caviar will be salty.

    Whip egg whites

    In a clean, dry bowl, whisk the room-temperature egg whites to soft peaks. Use an electric mixer for best, quick results. Gently but thoroughly fold half of the whipped egg whites into the warm potato mixture to loosen it, then fold in the remaining whites until fully incorporated and the mixture is light and airy. Take care not to overmix — you want air to remain in the whites.

    Portion and bake

    Preheat the oven to 200°C (400°F). Line a baking sheet with parchment or lightly butter a shallow baking dish. Using two spoons or a piping bag fitted with a round tip, portion 8 evenly sized quenelles or mounds (about 2–3 tablespoons each) of the potato cloud mixture onto the prepared sheet. Smooth tops if desired. Bake for 10–12 minutes until the exterior is lightly golden and the bottoms set; for a slightly browned top, finish under the broiler for 1–2 minutes, watching carefully.

    Prepare sour cream garnish

    Stir together the sour cream, lemon zest, lemon juice, and half of the snipped chives in a small bowl. Season very lightly with a pinch of fine sea salt and a small grind of white pepper. Transfer to a small piping bag or keep spoon-ready.

    Plate with caviar

    When potato clouds are baked, allow them to rest 1 minute on the pan, then transfer to individual serving plates using a spatula. Pipe or spoon a small dollop (about 1 teaspoon) of the lemon chive sour cream onto each potato cloud. Place about 7–8 grams (approx. 1–1.5 teaspoons) of caviar atop the sour cream on each cloud — handle caviar gently and keep chilled until final assembly.

Finishing

    Finish and garnish the plated potato clouds by drizzling a tiny amount of extra-virgin olive oil around or lightly over each cloud (about 1/8 teaspoon per portion). Sprinkle a few flakes of flaky sea salt and a light crack of freshly ground black pepper over the potatoes and surrounding plate.

    Garnish each portion with a few microgreens or a small dill sprig and the remaining snipped chives. Serve immediately so the potato clouds remain warm and the caviar chilled for the best contrast of temperatures and textures.
