Prepare Vegetables
Wash and cut
Rinse all vegetables under cold running water. Trim broccoli and cauliflower into even bite-size florets. Peel and slice carrots into 1/4-inch rounds on a bias for faster, even cooking. Trim ends from snow peas. Remove thick stems from kale if using and roughly chop; baby spinach can be left whole.
Pat vegetables dry with a clean towel or spin in a salad spinner to remove excess water. This helps avoid steaming extra condensation onto the vegetables.

Set up steamer
Pour 1 cup water into a medium saucepan and bring to a simmer over medium-high heat. Place a steamer basket or insert in the pan making sure the water does not touch the bottom of the basket. If you don't have a steamer basket, use a heatproof colander or sieve that fits over the pot with a tight-fitting lid.
Steam time
Cover the pot, reduce heat to maintain a gentle simmer, and steam until vegetables are tender-crisp: about 5–7 minutes for carrots and cauliflower, 4–6 minutes for broccoli, and 1–2 minutes for snow peas and spinach. Check doneness with a fork — vegetables should be bright in color and give slightly but not be mushy.
If steaming in batches, remove fully cooked vegetables to a warm bowl and continue steaming the remainder. Reserve any accumulated steaming liquid if you want to drizzle a teaspoon or two over the vegetables later.
Finish and Serve
Season
Carefully transfer steamed vegetables to a serving bowl. Immediately toss with butter (or olive oil) so it melts/coats evenly. Sprinkle with salt and pepper, add the optional lemon juice, and toss again to combine. If you reserved steaming liquid, add up to 1–2 teaspoons to loosen and enhance flavor.
Taste and adjust seasoning. Garnish with chopped fresh parsley or cilantro if using. Serve warm.
Leftovers: store cooled vegetables in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a little oil or in the microwave with a splash of water to restore moisture.
