Method
Marinated Goat
Trim and Score
Trim excess fat from the goat pieces and pat dry with paper towels. Make 2–3 shallow cuts in larger pieces so marinade penetrates.
Prepare Marinade
In a large bowl combine lime juice, orange juice, minced garlic, sliced scallions, chopped thyme, chopped parsley (or bok choy if using), chopped hot pepper, olive oil, adobo/bouillon (if using), salt and black pepper. Whisk until combined.
Marinate
Add goat pieces to the marinade, tossing to coat thoroughly. Cover and refrigerate at least 6 hours, preferably overnight (8–24 hours) to tenderize and flavor the meat. Stir or turn pieces once or twice while marinating so all sides absorb the marinade evenly.
Dry Rub / Coating
Make Dry Coating
In a shallow bowl or wide plate whisk together flour, cornstarch, paprika, garlic powder, onion powder, dried thyme, cayenne (if using), salt and black pepper until uniform.
Drain and Pat Dry
Remove goat from marinade and let excess marinade drip off. Pat each piece lightly with paper towels so the coating will adhere. Reserve marinade juices to simmer into a sauce later if desired (optional).
Coat Pieces
Working in batches, dredge goat pieces in the dry coating, pressing gently so a thin even layer sticks to the meat. Shake off excess flour and set pieces on a wire rack while you heat the oil.
Frying / Finish
Heat Oil
Pour oil into a large heavy skillet (cast-iron preferred) to a depth of about 1/3 inch. Heat over medium-high until shimmering and a pinch of flour sizzles immediately (approximately 350°F/175°C).
Shallow Fry Batches
Fry the coated goat pieces in a single layer, without overcrowding, 3–5 pieces per batch depending on pan size. Cook 4–6 minutes per side until golden brown and internal temperature reaches 145–160°F (for tender goat; cooking time varies with piece size). Adjust heat to maintain oil temperature — reduce if browning too quickly.
Rest
Transfer cooked pieces to a wire rack set over a baking sheet to drain and stay crisp. Keep warm in a 200°F (95°C) oven if cooking multiple batches.
Optional Finish (Grill/Char)
For the classic 'grilled' flavor, finish the fried goat briefly on a hot grill or under a broiler: place pieces 2–3 minutes per side to develop smoky char. Brush lightly with reserved marinade (boiled first) or a blend of 1 tbs oil + 1 tbs lime juice + pinch salt for gloss.
Serve
Arrange kabrit fritay on a platter. Serve with lime wedges and pickled onions/pikliz on the side. Leftovers can be reheated in a 375°F oven until warmed through to keep crisp.
