Fish & Marinade
Prepare and marinate the fish
Rinse the whole fish under cold water and pat dry with paper towels. Make 3–4 diagonal slashes on each side about 1 cm deep. Rub the fish all over (including inside the cavity) with lime/lemon juice, 1 tsp salt and 1 tsp black pepper. Let marinate for 15–20 minutes while preparing other ingredients.
Dust for frying
Lightly dust the marinated fish with 3 tablespoons of all-purpose flour, coating the outside and in the slashes; shake off excess. This helps develop a crisp, browned exterior.
Browning & Sauce Base
Caramelize sugar (create brown stew color)
In a large, heavy skillet or Dutch oven over medium heat, add 2 tablespoons of the vegetable oil and 3 tablespoons brown sugar. Stir constantly until the sugar melts and turns a deep amber-brown but not burned (about 3–4 minutes). Once caramelized, carefully add 1 tablespoon tomato paste and stir briefly to combine. Immediately add 100 ml of the water or stock to deglaze (stand back — it may sputter). Scrape any browned bits into the sauce.
Build the sauce
To the caramel base, add 2 tablespoons dark soy sauce and 1 tablespoon light soy sauce. Stir in paprika, curry powder, and half of the sliced onions, half the garlic and half the ginger. Add remaining 300 ml water or stock and the optional half bouillon cube, stirring to form a smooth brown sauce. Taste and adjust salt lightly if needed (remember soy is salty). Bring to a gentle simmer and reduce heat to low to keep warm.
Frying the fish
Heat remaining 4 tablespoons of oil in a separate large frying pan over medium-high heat until shimmering but not smoking. Carefully slide the dusted fish into the oil. Fry for 4–5 minutes per side (depending on thickness) until deeply browned and crisp. Use a fish spatula to turn gently to avoid tearing. Transfer the fried fish to a plate lined with paper towels to drain excess oil.
Aromatics & Final Assembly
Add Scotch bonnet
Pierce the scotch bonnet pepper a couple of times (to release heat without shredding the sauce) and add it to the simmering sauce. Leave whole if serving to those who wish to avoid heat, or finely chop if you want more spice. Simmer 2–3 minutes.
Combine fish and sauce
Gently slide the fried fish into the skillet with the sauce. Spoon sauce over the fish, cover partially, and simmer on low for 6–8 minutes to let the fish absorb the flavors and heat through. Baste the fish occasionally with the sauce. If sauce appears too thin, boil uncovered for 1–2 minutes to reduce; if too thick, add up to 50 ml water.
Finish and garnish
Remove thyme sprigs and scotch bonnet (if left whole). Taste and adjust seasoning with a pinch of salt or a splash more soy if needed. Garnish with chopped fresh parsley and additional sliced scallions. Serve hot.
