Preheat and dry
Preheat the oven to 425°F (220°C). Pat the wings dry thoroughly with paper towels — removing surface moisture is key to crisping.

If wings are whole, separate into drumettes and flats and remove tip pieces (reserve tips for stock). Place wings in a large bowl or on a rimmed sheet pan.
Season and Coat

Mix dry rub
In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and optional cayenne. Mix until even.

Coat wings
Sprinkle the baking powder and the dry rub mixture over the dried wings. Add 1 tsp neutral oil. Toss or use your hands to evenly coat each wing so the baking powder and spices are distributed; the baking powder helps the skin crisp.
Bake

Arrange and space
Arrange wings skin-side up in a single layer on a wire rack set over a rimmed baking sheet. Leave small gaps between wings so hot air can circulate. If you don’t have a rack, use parchment or foil and flip once during cooking.

Initial bake
Bake at 425°F (220°C) for 25 minutes. Do not open the oven too often; this period renders fat and starts crisping.

Increase crispness
After 25 minutes, flip the wings (if on sheet without rack) and continue baking another 10–15 minutes until skin is deeply golden and crisp. If desired, finish with 2–3 minutes under the broiler, watching closely to avoid burning.
Make Sauce (optional)

Prepare sauce
While wings finish baking, melt the unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Whisk in hot sauce, honey, apple cider vinegar, and 1/4 tsp salt until smooth and slightly glossy. Warm through but do not boil.

Toss wings in sauce
When wings are done and very hot, place them in a clean large bowl. Pour the sauce over the wings and toss quickly to coat evenly. For saucier wings, add up to 2 tbsp more hot sauce or 1–2 tbsp more butter to thin and increase volume.
Finish & Serve

Transfer wings to a serving platter. Sprinkle chopped parsley or chives over the wings for color. Serve immediately with celery sticks and blue cheese or ranch dressing on the side.
