Prep wings
If wings are whole, pat them dry with paper towels. Trim any excess skin and tips if desired; you should have drumette and flat portions. Place wings in a large bowl or on a rimmed baking sheet.

Season and dry
Sprinkle kosher salt, black pepper, and baking powder evenly over the wings. Toss or use your hands to coat every piece. The baking powder helps crisp the skin during cooking.

For best crispness, place the seasoned wings on a wire rack set over a baking sheet and refrigerate uncovered for 30–60 minutes to dry the skin. If short on time, proceed immediately.

Preheat oven to 425°F (220°C). Line a baking sheet with foil and set a wire rack on top. Arrange wings in a single layer with space between pieces. Bake for 25 minutes, then flip each wing and continue baking 12–18 minutes more, until skin is deep golden brown and internal temperature reaches 165°F (74°C). Total time will be about 37–45 minutes depending on wing size and oven.

If you want extra crispness, broil on high for 2–3 minutes after baking—watch closely to avoid burning.

Melt butter
While wings bake, combine butter and hot sauce in a small saucepan over low heat or in a microwave-safe bowl. Warm gently until butter melts, stirring to combine.

Finish sauce
Remove from heat and whisk in honey (if using), apple cider vinegar, Worcestershire sauce, garlic powder, and salt until smooth and slightly emulsified. Taste and adjust heat or salt as desired.

Toss wings in sauce
When wings are finished baking, transfer them to a large mixing bowl. Pour the warm sauce over the hot wings and toss vigorously to coat evenly. Return coated wings to the baking sheet or a clean platter.
