Prepare bread and cheese
Lay out 4 slices of bread on a clean work surface. On two slices, place 2 slices of cheddar each (overlapping slightly) so each sandwich will have 2 slices of cheese. If using ham or tomato, place 1 slice of ham and/or 1 tomato slice on top of the cheese for each sandwich.

Assemble sandwiches
Top each cheese-topped slice with the remaining bread slices to form two sandwiches, pressing lightly so fillings are even.

Butter the bread
Spread about 1 tablespoon of softened butter evenly over the outside face of each top and bottom slice (about 1 tbs per sandwich side). If butter is cold, thin slices help spread; alternatively melt slightly then brush on.

Cook the sandwiches
Heat a nonstick skillet or griddle over medium-low to medium heat (about 300–325°F / 150–165°C if using an infrared thermometer). Place sandwiches butter-side-down in the pan. Cook 3–4 minutes until the bottom is golden brown. While that side cooks, press gently with a spatula to encourage even melting. Flip the sandwiches and cook the second side another 3–4 minutes until golden and the cheese is melted. If the bread is browning too quickly before the cheese melts, reduce heat to low, cover the pan for 1–2 minutes to trap heat, then finish uncovered.

Rest and slice
Transfer sandwiches to a cutting board and let rest 1 minute so cheese sets slightly. Cut each sandwich in half diagonally or into fun shapes with cookie cutters for kids.
