Prepare bread and vegetables
Split the mini hoagie rolls and set them open on a plate. Thinly slice the onion and bell pepper (if using) into small strips suitable for a child-sized sandwich.

Slice the beef
If beef isn't pre-sliced, place it briefly in the freezer (15–20 minutes) to firm up, then slice very thinly against the grain into bite-size strips so it cooks quickly and is tender for kids.

Cook the beef
Push the softened vegetables to one side of the pan. Increase heat to medium. Add the thinly sliced beef in an even layer. Season with 1/8 tsp black pepper and 1/8–1/4 tsp salt (adjust to taste). Cook 1–2 minutes without stirring to allow slight browning, then stir and cook another 1 minute until beef is just cooked through. Total cook time for the beef should be 2–3 minutes to keep it tender.

Combine and melt cheese
Mix the beef with the vegetables in the skillet. Turn heat to low. Lay the cheese slices over the warm beef-and-veg mixture and cover the pan with a lid or a large plate for 30–60 seconds until the cheese melts and becomes gooey. If needed, tear cheese slices into smaller pieces to cover the filling evenly.
Assemble and serve

Spoon the cheesy beef-and-vegetable mixture evenly into the two hoagie rolls (about 3 oz filling per roll). Add optional pickle slices and a small squirt of ketchup if desired. Close the sandwiches and serve warm. Cut each sandwich in half for an easy-to-handle portion for kids.
