    Mix

    In a medium bowl, combine 1 lb ground beef, 2 tbs fine dry breadcrumbs, 2 tbs milk, 1 large egg, 2 tbs very finely grated onion, 3 tsp salt, and 1 tsp black pepper. Use clean hands or a fork to gently mix just until combined — avoid overworking so patties stay tender (about 20–30 seconds of mixing).

    Form Patties

    Divide the mixture into 4 equal portions (approximately 4 oz / 113 g each). Shape each portion into a round patty about 3 to 3.5 inches (7.5–9 cm) in diameter and roughly 1/2 inch (1.2 cm) thick. Press a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

    Cook Patties

    Heat a large nonstick skillet over medium heat. Add 1 tbs vegetable oil and 1 tbs butter; when butter foams and oil shimmers (about 1 minute), add the patties leaving space between them. Cook for 3–4 minutes without moving until a brown crust forms. Flip and cook 2–3 minutes more. If adding cheese, place 1 slice of mild cheddar on each patty in the last 1 minute of cooking and cover the skillet for 30–60 seconds to melt.

    Use an instant-read thermometer if desired; cooked patties should reach 160°F (71°C) for ground beef. Remove patties to a plate and tent loosely with foil to rest 2–3 minutes.

Buns & Cheese

    While patties rest, split 4 soft hamburger buns. Spread a thin layer of softened butter on the cut sides. In a separate skillet or griddle over medium heat, place buns butter-side down and toast 1–2 minutes until golden and warm. Alternatively, toast in a toaster oven for 1–2 minutes.

    Assemble each kid burger: place a lettuce leaf on the bottom bun (if using), add a cheese-topped patty, then a couple pickle slices and a thin tomato slice if desired. Spread ~1/2 tbs ketchup and ~1/2 tbs mayonnaise on the top bun (adjust to child preference). Close the burger and serve immediately.
