    Prepare the steak

    If your ribeye is not pre-sliced, freeze for 20–30 minutes until firm and slice as thinly as possible across the grain. Pat the slices dry with paper towels. Season the beef evenly with 1 tsp kosher salt and 1 tsp freshly ground black pepper.

    Cook the steak

    Heat 1 tablespoon olive oil and 1 tablespoon butter in a large heavy skillet or cast-iron pan over medium-high heat until shimmering. Work in batches to avoid crowding: add half the steak slices and spread into an even layer. Let sear undisturbed for 30–45 seconds, then stir and flip to cook through another 30–45 seconds. Remove to a warm plate and repeat with remaining steak. Return all cooked slices to the pan briefly to re-warm and toss with any pan juices; keep warm while assembling sandwiches.

    Caramelize the onions

    In a wide skillet over medium-low heat, melt 2 tablespoons unsalted butter with 1 tablespoon olive oil. Add the thinly sliced onions (about 2 cups) and 1 teaspoon kosher salt. Cook slowly, stirring every few minutes, for 25–35 minutes until deep golden-brown and soft. Stir in 1 teaspoon granulated sugar during the first 5 minutes to encourage caramelization. If onions begin to stick, deglaze with a splash of the wine or a tablespoon of broth to loosen fond.

    Finish the onion sauce

    When onions are deeply caramelized, add 1 teaspoon minced garlic and cook 30 seconds until fragrant. Pour in 60 ml dry white wine or dry sherry (optional) to deglaze, scraping up browned bits; let it reduce until nearly evaporated (about 1–2 minutes). Add 120 ml beef broth and 1 teaspoon Worcestershire sauce; simmer 2–3 minutes to meld flavors and concentrate slightly. Taste and adjust seasoning with a pinch more salt or pepper if needed. Keep warm.

    Toast the rolls

    Split the hoagie rolls (3 rolls) and spread the cut sides with the softened butter. Place cut-side down on a medium skillet or griddle over medium heat and toast until golden, 1–2 minutes. Alternatively, toast under a broiler for 1–2 minutes watching closely.

    Assemble & melt the cheese

    Preheat oven broiler or set a heavy skillet on medium-low. Pile equal portions of the warmed sliced steak onto the bottom halves of the toasted rolls (approx. 1/3 lb of steak per 2 sandwiches). Spoon generous portions of the caramelized onion mixture over the steak, ensuring some of the flavorful sauce soaks the meat. Layer provolone slices and a sprinkle of shredded Swiss/Gruyère over the onions and meat. Place assembled open-faced sandwiches under the broiler for 1–2 minutes, or cover the skillet with a lid for 1–2 minutes, until cheese is melted and bubbling. Remove when cheese is fully melted.

    Finish and serve

    Slide the melted, cheesy steak and onions into the roll tops. Optionally garnish with thinly sliced scallions and a handful of arugula for brightness. Serve immediately with any remaining pan juices spooned over the sandwich or a small bowl of extra warmed beef-onion jus for dipping.
