    Make the mixture

    In a large bowl combine ground beef and ground pork. Add breadcrumbs, egg, Worcestershire sauce, kosher salt, and black pepper. Gently mix with your hands or a spatula until just combined — do not overwork the meat to keep patties tender.

    Portion and shape

    Divide the mixture into 4 equal portions (approximately 4.5–5 oz each). Form each portion into a loose ball, then flatten into a patty about 3/4-inch thick with a slight dimple in the center to prevent puffing while cooking.

    Preheat and cook

    Heat a heavy skillet or griddle over medium-high heat until hot. Add vegetable oil and spread to coat. Place patties on the hot surface leaving space between them. Cook without moving for 3–4 minutes until a deep brown crust forms. Flip and cook 2–3 minutes on the second side for medium (adjust time for desired doneness).

    Add cheese

    About 1 minute before patties are done, place a slice of cheddar on each patty. Remove from the griddle and tent loosely with foil to rest while you finish toppings.

    Cook bacon

    In a separate skillet over medium heat, add bacon strips and cook until crisp, turning occasionally, about 6–8 minutes depending on thickness. Transfer to a paper-towel-lined plate to drain.

    Toast buns

    Butter the cut sides of each bun with the softened butter. Return the griddle or skillet to medium heat and toast the buns cut-side down until golden, about 1–2 minutes. Set aside.

    Make quick pickle-onion

    Thinly slice the red onion. In a small bowl combine sliced onion with apple cider vinegar, sugar, salt, and black pepper. Toss and let sit for at least 5 minutes to mellow the onion.

    Fry eggs (optional sunny-side)

    Reduce skillet heat to medium-low, add a little oil or butter if needed. Crack eggs into the pan and cook until whites are set but yolks remain runny, about 2–3 minutes for sunny-side. For over-easy, flip gently and cook 10–20 seconds more. Season eggs with a pinch of salt and pepper.

    Assemble sauce

    In a small bowl combine mayonnaise, Dijon mustard, and a pinch of salt and pepper. Stir until smooth. Taste and adjust seasoning.

    Assemble burgers: Spread about 1 tablespoon of mayonnaise mixture on the bottom half of each toasted bun. Place lettuce leaf on the mayo, then the rested cheeseburger patty. Top each patty with 2 bacon strips, a fried egg (if using), 2–3 slices of tomato, a few quick-pickled onion rings, and a tablespoon of sliced pickles. Spread additional mayo on the top bun if desired and close the burger. Serve immediately.
