Soften and combine cheeses
Preheat oven to 375°F (190°C). In a medium mixing bowl, add the 8 oz softened cream cheese and 1 cup sour cream. Use a hand mixer or sturdy spatula to beat until smooth and completely combined, about 1–2 minutes.

Stir in 2 cups shredded sharp cheddar and 1 cup shredded Monterey Jack until evenly distributed into the cream cheese mixture. Set aside.

Add the 15 oz canned chili (slightly drained if very watery) and 4 oz diced green chiles to the skillet. Stir to combine and bring to a gentle simmer.

Season the chili mixture with 1 tsp ground cumin, 1 tbs chili powder, 1 tsp hot sauce, 1/2 tsp salt, and 1/4 tsp black pepper. Simmer uncovered 4–5 minutes to let flavors meld and excess moisture reduce slightly. Remove from heat and let cool 2–3 minutes.

Fold the warm chili mixture into the prepared cheese mixture, stirring until evenly incorporated. Taste and adjust seasoning (salt, hot sauce) as desired.

Transfer the combined chili-cheese mixture into a 1.5 to 2-quart (or 9-inch round) oven-safe baking dish, smoothing the top with a spatula. Sprinkle 1/2 cup additional shredded cheddar evenly over the top.

Bake in the preheated 375°F (190°C) oven until the edges are bubbly and the top is lightly golden, about 18–22 minutes. For a browned top, broil 1–2 minutes watching closely to avoid burning.

Remove from oven and let rest 3–5 minutes. Garnish with 2 tbsp sliced green onions, 2 tbsp chopped cilantro (optional), and sliced jalapeño if using.
