Prep chicken

    Trim and slice

    Trim any fat from the chicken breasts. Slice each breast into 3–4 strips (about 1" wide) so you have uniform fingers that will cook evenly. Aim for similar thickness across pieces.

    Place the chicken strips in a bowl and sprinkle the kosher salt, black pepper, garlic powder, and paprika over them. Toss gently to coat every piece. Let sit at room temperature for 10 minutes while you prepare the breading station (or refrigerate up to 30 minutes).

Set up breading station

    Arrange three shallow bowls or rimmed plates. In the first bowl combine the flour with a pinch of salt and a little black pepper. In the second bowl whisk together the eggs and milk until smooth. In the third bowl combine the Panko breadcrumbs, grated Parmesan (if using), dried oregano, onion powder, 0.5 tsp salt, and 0.25 tsp black pepper; stir to blend.

    Pat each chicken strip dry with paper towel before breading to help the coating adhere.

Breading

    Working in batches, dredge a chicken strip in the flour, shaking off excess. Dip it into the egg wash, letting excess drip off, then press it into the Panko mixture, coating thoroughly and gently pressing the crumbs onto the surface. Place breaded fingers on a wire rack set over a baking sheet. Repeat until all strips are breaded. For an extra-crisp double coat (optional): return each coated strip to the egg wash and then again into the Panko.

    Let the breaded chicken rest on the rack for 10 minutes to help the coating adhere before frying.

Frying

    Pour oil into a large skillet (cast-iron or stainless) to a depth of about 1/4–1/2 inch (approx. 1 cup). Heat over medium-high until oil reaches 350°F (175°C) or a small breadcrumb sizzles and browns in ~30 seconds when tested. If you don't have a thermometer, heat until shimmering but not smoking.

    Fry the chicken fingers in a single layer without crowding the pan — usually 3–5 minutes per side depending on thickness. Turn once with tongs when the underside is golden brown. Aim for an internal temperature of 165°F (74°C). If pieces brown too quickly before cooking through, reduce heat to medium and continue cooking until done.

    Transfer cooked fingers to a wire rack set over a baking sheet or to paper towels to drain. Keep them warm in a 200°F (95°C) oven while you finish remaining batches.

    Taste and adjust seasoning: sprinkle a little extra salt immediately after frying if desired. Serve the chicken fingers hot with lemon wedges and your choice of dipping sauces such as ranch or honey mustard.
