Prepare Chicken Filling

Cook and shred chicken
Place chicken breasts (about 1 lb) in a medium saucepan and cover with water or low-sodium chicken broth. Add a pinch of salt. Bring to a gentle boil, then reduce to simmer and cook until internal temperature reaches 165°F (about 12–15 minutes depending on thickness). Remove chicken and let cool slightly, then shred finely with two forks or chop finely. Alternatively, use leftover cooked chicken or rotisserie chicken and chop to small pieces.

Transfer shredded chicken to a mixing bowl. Add softened cream cheese (4 oz), shredded sharp cheddar (1 cup), 1 tablespoon buffalo sauce, 2 tablespoons ranch dressing, 1 teaspoon garlic powder, 1 teaspoon onion powder, 3 teaspoons salt, 1 teaspoon black pepper, and 2 tablespoons chopped chives or green onions (if using). Mix thoroughly until evenly combined and creamy. Taste and adjust buffalo sauce or seasoning to preference. The mixture should be sticky and hold together when formed into balls.

Using about 1 to 1 1/4 tablespoons of filling per popper (or a small cookie scoop), form the filling into 18–24 evenly sized balls. Place them on a parchment-lined baking sheet and chill in the fridge for 15–20 minutes to firm up; chilling helps the coating adhere and prevents balls from falling apart during frying/baking.

Heat vegetable oil in a deep pot to 350°F (175°C). Fry poppers in small batches (do not overcrowd) for 2–3 minutes, turning as needed, until golden brown and internal temperature reaches 165°F. Remove with a slotted spoon to a wire rack set over a baking sheet to drain and keep crisp. Drain on paper towels if needed.

Preheat oven to 425°F (220°C). Line a baking sheet with parchment and lightly spray with oil. Arrange coated poppers on sheet, spray tops lightly with olive oil spray. Bake 12–16 minutes, turning halfway, until golden and hot throughout (internal temp 165°F). For extra browning, switch to broil for 1–2 minutes while watching closely.
