    Make simple flavored syrup

    Combine sugar, 1 cup water, and light corn syrup in a medium saucepan over medium heat.

    Stir constantly until the sugar dissolves and the mixture comes to a gentle simmer. Continue simmering 2–3 minutes to slightly thicken the syrup.

    Remove from heat. Stir in the chosen flavoring (see Flavoring suggestions) and salt. If using citric acid, add it now to brighten the taste. Add food coloring dropwise until desired color is reached.

    Taste carefully: syrup will be concentrated. Adjust flavor by adding up to an additional 1 tsp flavoring for stronger taste (especially for extracts). For vanilla cream, use vanilla extract and optionally 1/2 tsp vanilla bean paste for depth.

    Let syrup cool to room temperature. Transfer to a clean container, cover, and refrigerate until cold. Syrup will keep refrigerated for up to 2 weeks.

Carbonation & bottling (makes ~12 x 12-oz bottles)

    Dilute syrup to final beverage strength

    Chill carbonated water thoroughly — very cold water holds carbonation best. Determine syrup-to-water ratio: start with 1 part syrup to 5 parts carbonated water (example: 1 cup syrup to 5 cups carbonated water) and adjust to taste. For the recipe quantities above, the concentrated syrup yield is roughly 2 cups; this will sweeten about 10–12 cups of carbonated water at a 1:5–1:6 ratio.

    If your carbonation source is a soda siphon or keg: mix the measured syrup with chilled carbonated water gently to avoid foaming, using a long spoon or by pouring slowly down the side of the mixing vessel.

    If bottling into individual bottles with still carbonated water: add approximately 2 tablespoons (30 ml) of chilled syrup per 12-oz bottle for a light soda, 3 tablespoons (45 ml) for medium, or 4 tablespoons (60 ml) for full-strength, then fill each bottle with chilled carbonated water, leaving 1/2 inch headspace. Cap immediately.

    Cap bottles tightly. If using glass with crown caps, use a proper capping tool to ensure a good seal. If using re-sealable PET or swing-top glass bottles, close firmly.

    Gently invert each bottle once or twice to mix syrup and soda. Do not shake vigorously.

    Chill bottled cream soda thoroughly (4°C / 39°F) for at least 2 hours before serving.

    Label bottles with flavor and date. Store refrigerated and consume within 7–10 days for best flavor and carbonation. Discard if bottles bulge or carbonation is off.

Serving

    To serve, pour over ice if desired. For a true cream-soda float, add a scoop of vanilla ice cream to a tall glass and pour chilled Vanilla Cream soda slowly over the top.

    Garnish orange sodas with a slice of orange, black cherry with a maraschino cherry, and root beer with a sprig of mint if desired.
