    Prep the vegetables and beans

    Drain and rinse the canned black beans in a sieve under cold water for about 30 seconds. Shake off excess water and transfer to a medium mixing bowl. Finely dice the red bell pepper (about 1/2 cup) and finely mince the red onion (about 1/4 cup). Chop the cilantro leaves and discard thick stems; measure 1/4 cup.

    Lightly mash and season

    Using a fork or potato masher, gently mash the black beans in the bowl until mostly broken but still slightly chunky (leave some whole beans for texture). Add the diced pepper, minced onion, and chopped cilantro. Stir in the cumin, chili powder, lime juice, salt, and black pepper. Taste and adjust seasoning as needed. The mixture should be well combined but not watery.

    Combine with cheese

    Fold in the shredded cheddar and Monterey Jack cheeses until evenly distributed. The cheese will help bind the filling when heated; if the filling seems very dry, add another 1 tablespoon lime juice or 1 tablespoon water to bring it together.

    Heat the pan

    Place a large nonstick or cast-iron skillet over medium heat. Add 1/2 tablespoon of olive oil or butter and swirl to coat the surface. Reduce heat to medium-low if the pan becomes very hot.

    Assemble first quesadilla

    Lay one flour tortilla flat on a plate or cutting board. Spread about 1/4 of the black bean and cheese filling evenly over half of the tortilla, leaving a 1/2-inch border at the edge to prevent spillover. Fold the empty half of the tortilla over the filling to create a half-moon. Repeat assembly as you cook additional quesadillas.

    Cook until golden and melty

    Carefully transfer the folded quesadilla to the preheated skillet. Cook 2 to 3 minutes until the bottom is golden brown and crisp. Use a spatula to flip the quesadilla and cook another 2 to 3 minutes until the second side is golden and the cheese inside has melted. If the outside browns too quickly before the cheese melts, lower the heat slightly and cover the pan briefly (30–60 seconds) to trap heat and help the cheese melt through.

    Repeat and finish

    Add remaining 1/2 tablespoon oil or butter to the skillet as needed and repeat the assembly and cooking process with the remaining tortillas and filling. Transfer cooked quesadillas to a cutting board and let rest 1 minute to set, then slice each into 3 wedges with a sharp knife or pizza cutter.

    Plate the quesadilla wedges and serve immediately with optional sour cream, salsa, and avocado or guacamole on the side. For garnish, sprinkle a few extra chopped cilantro leaves and a squeeze of lime if desired.
