Pulled Pork

    Prep and Season

    Pat the pork shoulder dry with paper towels. Combine kosher salt, black pepper, smoked paprika, garlic powder, and onion powder and rub evenly over all sides of the pork.

    Sear (optional, for extra flavor)

    Heat 1 tablespoon vegetable oil in a large heavy-bottomed skillet or Dutch oven over medium-high heat. Sear the pork on all sides until browned, about 3–4 minutes per side. Transfer to your slow cooker or keep in the Dutch oven.

    Cook Low and Slow

    If using a slow cooker: place the seared pork in the slow cooker, pour 60 ml apple cider vinegar and 240 ml broth around (not directly over) the pork, cover, and cook on low for 8 hours or high for 4–5 hours until pull-apart tender. If using the oven/Dutch oven: preheat oven to 300°F (150°C), add the liquids, cover tightly and braise 3–4 hours until tender.

    Shred and Sauce

    Remove the pork to a cutting board and shred with two forks, discarding any large pieces of fat. Skim any excess cooking fat from the braising liquid, then stir 240 ml BBQ sauce into the shredded pork along with a splash of the cooking liquid (2–3 tablespoons) to loosen. Taste and adjust seasoning with salt and pepper. Keep warm.

    Prep Veggies and Steak

    Thinly slice the onion and bell peppers. If your steak is not pre-sliced, freeze the steak for 20–30 minutes until slightly firm, then slice as thinly as possible across the grain. Season the sliced steak with 1 tsp salt and 1/2 tsp black pepper.

    Cook Onions and Peppers

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced onions and peppers and cook, stirring occasionally, until softened and beginning to brown, about 6–8 minutes. Remove to a plate and keep warm.

    Quick Sear Steak

    In the same skillet, increase heat to high. Add the thinly sliced steak in a single even layer (work in batches if needed) and sear quickly, about 1–2 minutes per side, until just browned but still tender. Return the onions and peppers to the skillet and toss for 30 seconds to combine. Reduce heat to low and keep warm.

Assembly & Melt

    Toast Rolls

    Preheat broiler to high. Split the hoagie rolls and lightly butter cut sides. Place rolls cut-side up on a sheet pan and broil 1–2 minutes until golden—watch closely to avoid burning.

    Layering

    On each toasted bottom roll, place a portion of sauced pulled pork (about 1/2 cup), then a portion of the quickly seared steak and pepper mixture (about 1/4 lb steak portion equivalent). Top with 2 slices of cheese per sandwich, arranging to cover the meat.

    Melt Cheese

    Return the assembled open-faced sandwiches to the broiler or a 350°F (175°C) oven for 1–3 minutes until the cheese is melted and bubbly. Remove carefully.

    Finish

    Add optional pickled jalapeños or extra BBQ sauce to taste, sprinkle with chopped parsley if using, and close the sandwiches with the top rolls. Serve hot.
