Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they begin to soften. Add minced garlic and cook for an additional minute.
Cook the Hash
Press the mixture down with a spatula and let it cook undisturbed for about 5-7 minutes until it begins to crisp on the bottom. Flip portions of the hash to brown the other side, cooking for another 5-7 minutes.
Serve
Once the hash is crispy and golden brown, remove from heat. If desired, serve topped with a fried or poached egg and garnish with fresh parsley.
