Prepare the Potatoes

In a large pot, bring salted water to a boil and add the diced potatoes. Cook for about 10-12 minutes or until just tender. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they begin to soften. Add minced garlic and cook for an additional minute.
