Marinated Peppers & Onions

Slice vegetables

Core and seed the bell peppers, cut into 1/2-inch strips. Peel the onion and cut into 1/4-inch slices. Thinly slice the fresh jalapeño (remove seeds for less heat).

Make marinade

In a medium bowl whisk together olive oil, red wine vinegar, granulated sugar, minced garlic, dried oregano, salt, and black pepper until sugar dissolves.

Add the pepper, onion, and sliced jalapeño to the marinade and toss to coat. Let sit at room temperature for at least 15 minutes while you prepare the grill (or up to 2 hours refrigerated). Toss once or twice during marinating.

Cook peppers & onions: Heat a grill pan or skillet over medium-high heat (or preheat outdoor grill to medium). Add a tablespoon of olive oil to the pan. Add the marinated peppers and onions in a single layer and cook, stirring occasionally, until softened and charred in spots, about 8–10 minutes. If grilling on the outdoor grill, use a perforated grill pan or a foil tray; cook until tender, 8–12 minutes. Remove from heat and keep warm.

Preheat grill: Preheat grill to medium-high (about 375–400°F / 190–200°C). If using a stovetop griddle or grill pan, heat over medium-high until hot.

Grill sausages: Lightly oil the grill grates. Place the jalapeño cheddar sausages on the grill and cook, turning every 2–3 minutes, until nicely charred and cooked through (internal temperature 160°F / 71°C), about 10–12 minutes depending on thickness.

Toast rolls: While sausages rest for 3–4 minutes after grilling, split the hoagie rolls but keep them hinged. Spread butter on the cut sides and toast them cut-side down on the grill or in a skillet until golden, about 1–2 minutes.

Assembly: Place one grilled sausage in each toasted roll. Top each sausage with a generous portion of the warm marinated peppers and onions. Add a slice of provolone or cheddar on top of the peppers if using; the residual heat will slightly melt the cheese. Finish with pickled jalapeños and a sprinkle of fresh cilantro if desired.

Serve immediately while hot. Provide extra marinated peppers on the side and any condiments you like (mustard, hot sauce).
