Prepare cauliflower

Wash and thoroughly dry 1.5 lbs cauliflower. Cut into bite-size florets, roughly uniform (about 1–1½ inches) so they cook evenly.

Make batter

In a large bowl whisk together 3 tbs all-purpose flour, 2 tbs cornstarch, ½ tsp baking powder, 1 tsp fine sea salt and ½ tsp black pepper. In a separate small bowl whisk 1 large egg with ¾ cup cold water. Pour egg mixture into dry ingredients and whisk briefly to combine — the batter should be slightly thick but pourable. If too thick add up to 1 tbsp cold water.

Heat oil

Pour about 3 cups neutral oil into a large heavy pot or Dutch oven to a depth of 2–3 inches. Attach a thermometer and heat to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter: it should sizzle and rise immediately.

Batter and fry

Working in batches to avoid overcrowding, dip florets into the batter to coat completely, letting excess drip off. Carefully lower florets into the hot oil with a slotted spoon or spider. Fry until golden brown and crisp, about 4–5 minutes per batch (internal texture tender, exterior crisp). Maintain oil temperature near 325–350°F by adjusting heat. Remove with a slotted spoon and drain on a wire rack set over a sheet pan or on paper towels.

Keep warm

Keep finished batches warm in a single layer in a low oven (200°F / 95°C) while you fry remaining florets to preserve crispness.

Optional garnish

Once sauced, garnish with 2 tbsp chopped scallions and 1 tsp sesame seeds if using.

Combine and adjust

In a small saucepan combine ½ cup honey, 1 tbsp sambal oelek (or chosen chile), 1 tsp rice vinegar, ½ tsp soy sauce and 1 tsp lime juice. Warm gently over low heat just until the honey thins and the chile fully incorporates, about 1–2 minutes; do not boil. Taste and adjust heat or acidity — add up to 1–2 tsp more sambal or 1 tsp more vinegar depending on preference. If the mixture is too thick, stir in up to 1 tbsp water to reach a pourable consistency.

Toss with cauliflower

Place the hot fried cauliflower in a large bowl. Pour the warm hot-chile-honey evenly over the cauliflower and toss gently but quickly to coat each piece. Work in batches if needed to avoid over-coating; you want a shiny glaze, not a pool of sauce. Serve immediately so the coating stays crisp.
