Prep
Pat chicken breasts dry. If breasts are thick, slice each horizontally to make two thinner cutlets or pound to 1/2-inch thickness between plastic wrap. Season both sides with 1 tsp salt and 1/2 tsp black pepper.
Grilled chicken method
Cook chicken
Heat a grill pan or outdoor grill over medium-high heat. Brush chicken with 1 tbs olive oil. When hot, place chicken on grill and cook 4–6 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Remove and rest 5 minutes, then slice thinly against the grain into strips.
Fried chicken method
Bread chicken
Set up a dredging station: flour in one shallow dish, beaten egg in a second, breadcrumbs in a third. Lightly coat each chicken cutlet in flour, shake off excess, dip into egg, then press into breadcrumbs to fully coat.
Fry chicken
Heat 1 tbs neutral oil in a large skillet over medium-high heat. When oil is shimmering, add breaded cutlets and cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack or paper towel-lined plate to rest 3–4 minutes, then slice into strips.
Assemble wraps
In the bowl with chopped romaine, add 3 tbs Caesar dressing and toss until lettuce is evenly coated. Taste and add additional dressing if desired (to taste).
Lay a warmed tortilla flat. In the center, place about 1 cup dressed romaine, 1/4 cup grated Parmesan, and a portion of sliced chicken (about half a chicken breast per wrap). Sprinkle a little extra Parmesan and a pinch of freshly ground black pepper.
Fold the bottom edge up over the filling, fold both sides in, and roll tightly to form a wrap. Repeat with remaining tortillas. If desired, lightly toast assembled wraps seam-side down in a dry skillet 1–2 minutes per side to seal and warm through.
Serve immediately with lemon wedges to squeeze over the chicken and extra Caesar dressing on the side.
