Cheeses

Method

Prep

1

Bring cheeses to room temperature

Remove all cheeses from refrigerator 30–60 minutes before serving so flavors and textures open up. Keep soft cheese in its container until ready to place on the board to avoid spreading.

2

Wash and dry all fresh fruit thoroughly. Hull strawberries and halve large ones. Cut melon into bite-size wedges or balls. Pat dried fruit to remove any stickiness.

3

If using baguette slices, lightly brush with olive oil and toast in a 375°F (190°C) oven for 6–8 minutes until golden. Cool before arranging.

4

Toast walnuts in a dry skillet over medium heat for 3–4 minutes, stirring frequently, until fragrant. Let cool.

Assembly

5

Choose a large wooden board or platter. Place small bowls for mustard and honey near the center or spaced around the board.

6

Position the cheeses first: place the soft cheese (Brie) whole (or partially sliced) with a spreader, the blue cheese wedge with a small knife, the manchego wedge or slices fanned, and the aged cheddar either in slices or a small stack. Space them apart to allow room for fruit and crackers.

7

Arrange fruits in clusters around and between the cheeses: place grapes in small bunches (leave some on the stem for visual appeal), tuck strawberry halves and blueberries into gaps, and fan melon wedges. Add a small pile of dried apricots or figs near the blue cheese or cheddar.

8

Add nuts in small piles or in a shallow bowl: place toasted walnuts and almonds in separate spots so guests can choose. Sprinkle a few nuts around the board for a casual look.

9

Arrange crackers and toasted baguette slices in stacks or overlapping fans along the edges of the board. Keep gluten-free crackers separated and labeled or placed on a separate plate to avoid cross-contact.

10

Tuck rosemary or thyme sprigs between elements for color and aroma. Place cheese knives near their respective cheeses and spoons in the mustard/honey bowls. Drizzle honey over or next to the soft cheese and place the mustard bowl by the cheddar or manchego.

11

Finish by stepping back and filling any empty spaces with extra berries, a few more nuts, or small cracker stacks to create balance and visual appeal.

Serving & Tips

12

Serve with small plates and napkins. Provide tasting suggestions: pair blue cheese with honey and walnuts; manchego with quince paste (if available) or dried apricot; cheddar with whole-grain mustard and apple or pear slices (optional).

13

Keep the platter out for up to 2 hours at room temperature. Return leftover soft cheeses to the refrigerator after 2 hours. Store cut fruit separately in airtight containers.

14

To accommodate dietary needs, clearly label gluten-free crackers and keep utensils separate to avoid cross-contact.
