Wash oranges and lemon well. Using a microplane or vegetable peeler, remove orange zest in broad strips, avoiding the bitter white pith. Reserve 2 tablespoons zest strips. Thinly slice one orange into rounds, removing seeds if present. Zest 1 teaspoon lemon and set aside.

Lightly bruise the rosemary sprig between your fingers to release oils. Lightly crush coriander seeds and peppercorns with the flat side of a knife or mortar and pestle to increase aromatic release.

Pour the bottle of Grechetto white wine into a clean 1-liter glass jar or pitcher with a tight lid. If using the optional fortified/orange wine, add 1/2 cup now to increase color and depth.

Add the orange zest strips, sliced orange rounds, lemon zest, bruised rosemary, crushed coriander seeds, and lightly crushed peppercorns directly into the wine.

Stir gently to combine, then seal the jar or cover the pitcher and place it in the refrigerator for 6–24 hours. For a pronounced 'orange wine' character and brighter citrus aroma, aim for 12–18 hours. Taste after 6 hours and again at 12 hours to monitor intensity (longer infusion = stronger flavor and more color).

After infusion, strain the wine through a fine mesh sieve lined with cheesecloth into a clean pitcher to remove solids, pressing gently on solids to extract flavor but not bitter compounds. Discard solids.

Warm 1 tablespoon honey with 1 teaspoon hot water (or microwave briefly) to make a thin syrup. Stir the honey syrup into the infused wine until dissolved. If you prefer slightly sweeter wine, dissolve up to 1 teaspoon additional granulated sugar and taste again. Adjust to taste, but add sugar sparingly to preserve the wine's structure.

Refrigerate the finished wine for at least 1 hour to let flavors marry and to chill thoroughly. Alternatively, chill the serving glasses with ice while the wine rests.

Serve 4–6 oz (120–180 ml) per person in white-wine or stemless glasses over one optional ice cube if preferred. Garnish each glass with an orange slice and a small sprig of rosemary.

Store any leftover infused wine in a sealed bottle in the refrigerator and consume within 3–5 days for best freshness.
