Prepare Glass & Garnish
Prepare orange peel
Using a vegetable peeler or paring knife, cut a 1½–2 inch wide strip of orange peel, avoiding too much pith. Set aside for express oil and garnish.
Build the Cocktail
In a mixing glass or shaker without ice, add the bourbon, coffee liqueur, demerara simple syrup, cooled espresso (or cold brew), and two dashes of Angostura bitters. Stir gently to combine.
Add ice to the mixing glass until it is about 2/3 full and stir for 15–20 seconds until well chilled and slightly diluted. If you prefer a slightly fizzy finish, skip the stirring step and lightly roll with ice just to chill.
Discard ice or water from your chilled old-fashioned glass. Place a single large ice cube in the glass (optional). Strain the chilled bourbon mixture over the ice cube.
Top with Beer and Finish
Slowly pour the Eureka Heights MINI BOSS stout or porter (or chosen dark beer) down the back of a bar spoon held just above the cocktail surface so the beer layers gently on top and creates a foamy head. Pour gently to avoid excessive mixing; the goal is integration with a distinct dark foam cap.
If desired, very lightly dust the foam with chocolate shavings or a pinch (about 1/4 tsp) of cocoa powder for aroma and an extra dessert-like note.
Serve
Serve immediately while the beer head is fresh. Sip slowly to enjoy the layered flavors: bourbon warmth, coffee complexity, demerara sweetness, and the roastiness of the stout.
