Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon neutral oil. When hot, add the parboiled (or raw, if skipping parboil) potatoes in a single layer. Let cook undisturbed 3–4 minutes to develop a crust.

Add minced garlic, smoked paprika, dried thyme, 1/2 tsp salt and 1/4 tsp black pepper. Cook 1–2 minutes more to bloom the spices. Taste and adjust seasoning.

Finish by stirring in 1 teaspoon unsalted butter for gloss and richness. Keep warm in the pan on very low heat or transfer to a warm plate while you cook eggs.

Heat a 8–10 inch nonstick skillet over medium-low and add 1 tablespoon butter. Once butter foams and just begins to brown, crack 2 eggs into a small bowl (or crack directly into the pan). Gently slide eggs into the skillet. Season with 1/8 tsp salt and a pinch of pepper. For sunny-side up: cook undisturbed 2–3 minutes until whites are set but yolks remain runny. For over-easy: when whites are set around the edges, gently flip with a spatula and cook 15–20 seconds more for runny yolk. For over-hard: cook 1–2 minutes after flipping until yolk is fully set.

Whisk eggs with a pinch of salt and 1 tsp water until combined. Heat 1 tsp butter in the skillet over medium-low. Pour eggs in and let sit 10–15 seconds, then gently push curds with a spatula, folding until creamy and just set, about 1–2 minutes total. Remove from heat to avoid overcooking.

If adding bacon or sausage: cook bacon in a separate skillet over medium heat, 3–5 minutes per side until crisp; drain on paper towels. Cook sausage patties or links in 1 tsp oil over medium heat 4–6 minutes per side until internal temp reaches 160°F (71°C). Keep warm with the home fries.
