    Inspect the lump crabmeat for shells and cartilage; pick out any small shell pieces gently with your fingers. Transfer crabmeat to a large bowl and flake gently with a fork, keeping some lumps for texture.

    In a separate medium bowl, whisk together 1/2 cup mayonnaise, 1 large egg, 1 tablespoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, 1 tablespoon fresh lemon juice, 2 tablespoons finely chopped parsley, 2 finely sliced green onions, 1 teaspoon Old Bay seasoning, 1/2 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper until smooth.

    Combine with crab

    Add the mayo-egg mixture to the flaked crab in the large bowl. Add 1/2 cup fine breadcrumbs and gently fold everything together with a rubber spatula, mixing only until combined. Avoid overworking to keep crab lumps intact. If mixture feels too loose to form, chill 15–20 minutes to firm up.

    Shape cakes

    Divide the mixture into 8 equal portions for smaller cakes (or 4 for larger patties). Wet your hands slightly and form each portion into a compact patty about 3 inches wide and 3/4 inch thick. Lightly dust each patty with 1/4 cup all-purpose flour, then dip into the extra 1/2 cup breadcrumbs, pressing gently so a light coating adheres. Shake off excess.

    Heat pan

    In a large skillet over medium heat, add 1 tablespoon unsalted butter and 2 tablespoons vegetable oil. Heat until butter has melted and oil shimmers but is not smoking (about 30–60 seconds).

    Pan-fry

    Carefully place crab cakes in the skillet without crowding (cook in batches if needed). Fry 3–4 minutes per side until a deep golden brown crust forms and cakes are heated through. Use a spatula to flip gently to keep cakes intact. If crust browns too quickly, reduce heat to medium-low.

    Finish and rest

    Transfer cooked crab cakes to a wire rack set over a sheet pan or to a plate lined with paper towels. Let rest 2–3 minutes; this helps maintain crispness. Keep warm in a low oven (200°F / 95°C) if cooking batches.

Chef's Aioli

    Combine ingredients

    In a small bowl, combine 1/2 cup mayonnaise, 1 grated garlic clove, 1 teaspoon fresh lemon juice, 1/2 teaspoon Dijon mustard, 1/2 teaspoon smoked paprika, 1/2 teaspoon hot sauce (optional), and 1 teaspoon finely chopped capers (optional).

    Emulsify and season

    Whisk in 1 teaspoon extra-virgin olive oil until the aioli is glossy and slightly thinned. Taste and adjust seasoning with 1/4 teaspoon sea salt and 1/8 teaspoon freshly ground black pepper. Let the aioli sit for at least 10 minutes to allow flavors to meld; refrigerate if not using immediately.

To Serve

    Arrange 2–3 crab cakes per person on plates over a small bed of microgreens or mixed salad greens. Spoon 1–2 tablespoons Chef's Aioli over each cake or serve aioli on the side. Garnish with a lemon wedge and an extra sprinkle of chopped parsley if desired.
