    Par-cook the potatoes

    Place the diced russet potatoes in a medium pot and cover with cold salted water. Bring to a simmer and cook until just tender when pierced with a fork, about 6–8 minutes. Drain well and let sit in the colander for a few minutes to steam dry; pat with paper towel if needed to remove excess moisture.

    Heat the pan

    Set a large heavy skillet (cast iron preferred) over medium-high heat. Add the vegetable oil and 1 tablespoon butter. Once shimmering, add the par-cooked potatoes in a single layer if possible. Let them cook undisturbed for 3–4 minutes to develop a golden crust.

    Saute vegetables

    Toss the potatoes, then add the remaining 1 tablespoon butter, diced onion, and green bell pepper to the skillet. Cook, stirring occasionally, until the onion is translucent and the peppers soften, about 4–5 minutes.

    Add corned beef and seasonings

    Add the diced corned beef and minced garlic to the skillet. Break up larger pieces with a spatula and spread into an even layer. Let cook undisturbed 2–3 minutes to get some browning, then stir and press again to crisp other areas. Stir in the Worcestershire sauce, smoked paprika, kosher salt, and black pepper. Taste and adjust seasoning if needed. Continue cooking until the beef is heated through and the mixture is nicely browned overall, about 4–6 more minutes.

    Finish and garnish

    When the hash is well-browned and crisp in places, remove from heat. Stir in chopped parsley if using. Keep the skillet covered or move hash to a warm plate to keep hot while preparing eggs and toast.

    Toast the bread

    While the hash rests, toast the bread slices to your preference (in a toaster or under a broiler). Spread a little butter on each slice immediately after toasting.

    Cook the eggs

    In a small nonstick skillet over medium-low heat, melt the remaining butter. For eggs any style: - Fried (sunny-side or over-easy): crack eggs into the pan, season with salt and pepper, cook until whites are set (about 2–3 minutes). For over-easy, gently flip and cook 15–30 seconds more. - Scrambled: whisk eggs with salt and pepper, pour into pan, cook gently while stirring until soft-cooked, about 2–3 minutes. - Poached: bring a shallow pan of water to a gentle simmer with a splash of vinegar, create a whirlpool, drop eggs and cook 3–4 minutes for runny yolks. Choose style and cook accordingly.

    Plate and serve

    Divide the corned beef hash between plates or serve family-style. Top each portion with the two prepared eggs. Place the buttered toast on the side. Serve immediately so eggs are warm and yolks runny if desired.
