Prep dates
Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and set a wire rack on top (or use parchment). Using a small paring knife, make a lengthwise slit in each date and gently remove and discard the pit, keeping the date intact enough to reclose around the filling.

If using almonds: insert one roasted almond into the cavity of each pitted date. If using goat cheese: spoon about 1 teaspoon of soft goat cheese into each date cavity and gently press closed so filling stays inside.

Prepare bacon
Cut each bacon slice in half crosswise to yield 24 pieces. In a small bowl, mix the brown sugar, black pepper, and smoked paprika (if using).

Wrap dates
Wrap one half-slice of bacon around each filled date so the ends meet on the underside. Secure with a toothpick pushed through the center lengthwise. Lightly press each wrapped date into the brown sugar mixture so the sugar sticks to the bacon exterior (you can sprinkle the sugar on top instead if preferred).

Arrange the bacon-wrapped dates on the prepared wire rack (bacon seam down). Bake in the preheated 400°F (200°C) oven for 18–22 minutes, rotating the pan halfway through, until bacon is crisped and caramelized. For extra crispness, broil 1–2 minutes at the end, watching closely to avoid burning.
