    Prepare avocados

    Halve the avocados, remove pits, and scoop flesh into a medium bowl. Mash lightly with a fork until mostly smooth but still slightly creamy β€” you want a texture that will hold shape when chilled.

    In a separate bowl, beat the goat cheese and cream cheese together with a fork or small whisk until fully combined and smooth. This prevents lumps and helps the mixture bind with the avocado.

    Flavor and combine

    Add the lemon juice, olive oil, salt, and black pepper to the cheese mixture and stir. Fold the cheese mixture into the mashed avocado until homogeneous and smooth. Taste and adjust seasoning with more salt, pepper, or lemon as needed.

    Cover the bowl tightly with plastic wrap and chill in the refrigerator for 20–30 minutes. Chilling firms the mixture, making it easier to shape into truffles.

    Place chopped pistachios, chopped chives, smoked paprika, and sesame seeds in separate shallow bowls or sections of a plate. Line a baking sheet with parchment paper or plastic wrap to hold finished truffles.

    Using a small cookie scoop or a spoon, portion about 1 tablespoon (roughly 15–18 g) of the chilled avocado-goat cheese mixture per truffle. Roll each portion quickly between lightly floured or dampened hands to form a smooth ball. If hands stick, lightly wet them or chill the scoop between batches.

    Coat the truffles

    Roll each truffle in your chosen coating: nuts, chives, sesame seeds, or a light dusting of smoked paprika. Press gently so the coating adheres. Place coated truffles on the prepared tray spaced slightly apart.

    Once all truffles are coated, cover the tray lightly with plastic wrap and chill for at least 30 minutes to firm up. This helps them hold their round shape when served.
