Smoothie Sour: Inspired by lemon icebox pie, this blueberry variant is made with milk sugar, vanilla, lemon purée, and blueberry.

Chill sour ale until very cold. Pour 12 oz (one pint glass measure) into a chilled mixing pitcher. This is the primary body of the drink and should be gently effervescent but not overly carbonated.

Prepare beer base

Add 1 oz lactose (milk sugar) to the beer and stir gently to dissolve. The lactose contributes mouthfeel and sweetness without fermenting in the finished drink.

Stir in 1/2 tsp pure vanilla extract until incorporated. Set the mixture aside in the refrigerator while you prepare the fruit purée.

Place 3/4 cup fresh or frozen blueberries and 1/2 oz simple syrup into a blender or small saucepan. If using frozen, thaw slightly. Blend until very smooth (about 20–30 seconds).

Make blueberry purée

Optional: For a silkier texture, press the blueberry purée through a fine mesh strainer to remove skins and seeds. You should yield roughly 2–3 tablespoons of strained purée; reserve the purée.

If you don't have ready lemon purée, combine 1 oz freshly squeezed lemon juice (about 1 medium lemon) with a scant 1/4 tsp fine lemon zest and 1/4 oz simple syrup in a small jar and shake to emulsify. This yields a bright, slightly viscous lemon purée.

Prepare lemon purée

In a cocktail shaker or small blender, combine the reserved blueberry purée (about 2–3 tbsp), 1 oz heavy cream, 0.25 oz softened cream cheese, and 1 oz of the prepared beer/lactose/vanilla mixture. Add the 1 oz of lemon purée.

Build the smoothie sour

Add the ice (approximately 1 cup crushed or cubed). If using a cocktail shaker, cap and shake vigorously for 12–15 seconds to create an aerated, creamy texture. If using a blender, pulse 3–5 times until the mixture is smooth and slushy but still slightly carbonated (avoid over-blending the beer to preserve some fizz).

Taste and adjust: if it needs more brightness, add up to 0.25 oz more lemon purée; if sweeter needed, add up to 0.25 oz simple syrup. Any adjustments should be small to maintain balance.

Strain the shaken/blended mixture into a chilled coupe or stemmed glass. Use a fine strainer to catch any large particulates for a silky presentation.

Strain and serve

Garnish with 6 whole blueberries skewered or floated on top and a light dusting (about 1/4 tsp) of powdered sugar around the rim if desired. Finish with a pinch (about 1/4 tsp) of fresh lemon zest over the foam to boost aroma.

Serve immediately with a short spoon or straw. The drink should present as a creamy, slightly tart blueberry-lemon smoothie sour with smooth vanilla and lactose-driven body, evocative of a blueberry lemon icebox pie.
