Method
Popcorn
Heat oil
Use a large heavy-bottomed pot with a tight-fitting lid. Add 2 tablespoons neutral oil and place over medium-high heat. Put three popcorn kernels in the pot and cover.
Pop kernels
When the test kernels pop, add the remaining 1 cup popcorn kernels in an even layer. Cover, remove from heat for 10 seconds (this brings all kernels close to popping temperature), then return to heat. Shake the pot occasionally to keep kernels from burning and to redistribute heat.
Finish popping
Listen for the popping rate to slow to about 2–3 seconds between pops. Remove from heat, immediately transfer popcorn to a large mixing bowl to prevent steaming and sogginess. Discard any unpopped kernels.
Salt immediately
While popcorn is still hot, sprinkle 1.5 teaspoons fine sea salt evenly over it and toss gently to coat. This gives a base seasoning that adheres well to the popcorn.
Salt 'n' Vinegar Seasoning
Make seasoning slurry
In a small saucepan or microwave-safe bowl, combine 2 tablespoons white distilled vinegar, 1 tablespoon optional malted vinegar (if using), 1 tablespoon water, and 1 teaspoon cornstarch. Whisk until smooth so the cornstarch is fully dissolved.
Cook briefly
Place the mixture over low heat and stir constantly until it just starts to thicken and become slightly glossy, about 1–2 minutes. If using microwave, heat in 10–15 second bursts, stirring between, until slightly thickened. The goal is a thin, tacky liquid that will cling to the popcorn. Remove from heat and whisk in 1/2 teaspoon powdered sugar (optional) and 1 teaspoon extra fine sea salt until dissolved. Taste and adjust: add a pinch more salt if you prefer stronger salinity or a few drops more vinegar for extra tang.
Apply seasoning
Using a spoon or small drizzle bottle, lightly drizzle the warm vinegar slurry over the salted popcorn while tossing or shaking the bowl to distribute. Work in short intervals—drizzle a little, toss, then drizzle more—so the popcorn absorbs the flavor without becoming soggy. Continue until the seasoning is used and the popcorn has a glossy, slightly tacky coating but is not wet.
Dry briefly
Spread the seasoned popcorn on a baking sheet in a single layer and let sit for 5–10 minutes so the coating sets and any extra moisture evaporates. If you want it crisper faster, place the sheet in a 200°F (95°C) oven for 5 minutes, then remove and cool.
Finish (optional)
Optional butter & pepper
If using, drizzle the 2 teaspoons melted unsalted butter over the popcorn and toss lightly to add richness. Finish with 1/4 teaspoon freshly ground black pepper for a subtle savory note. Taste and adjust salt if needed.
Serve immediately. Store any leftovers in an airtight container at room temperature for up to 2 days; note the vinegar flavor mellows over time.
