Heat oil and pop kernels
Place a large heavy-bottomed pot with a tight-fitting lid over medium-high heat. Add the 2 tbs oil and 3 popcorn kernels. Cover and heat until those test kernels pop (about 2–3 minutes). Once they pop, add the remaining 1 cup of popcorn kernels, spread them in an even layer, cover, and reduce heat to medium. Shake the pot gently every 10–15 seconds to keep kernels moving and prevent burning. Continue cooking until the popping slows to 2–3 seconds between pops (about 2–4 minutes). Remove the pot from heat immediately.
Transfer to bowl
Pour the popped popcorn into a very large bowl, discarding unpopped kernels. If you used butter or oil in the finishing section, wait until it's melted and warm.

Make vinegar slurry
In a small heatproof bowl or measuring cup, whisk together 2 tbs malt vinegar and 1 tbs water with 1 tsp cornstarch until smooth and fully dissolved. The cornstarch helps the vinegar cling to the popcorn and reduces sogginess. If using powdered malt vinegar, whisk it in now as well; it will intensify the tang without extra liquid.
Heat the slurry (optional)
Microwave the slurry for 10–15 seconds or warm it in a small saucepan over low heat, whisking until it thickens slightly and becomes glossy (this activates the cornstarch). Let it cool for 30 seconds — it should be warm but not scalding.
Combine with fat
Whisk the 1 tbs melted unsalted butter or neutral oil into the warm vinegar slurry. This helps the seasoning distribute evenly and improves mouthfeel. If you prefer oil-free, skip the butter/oil and use vinegar slurry alone.
Season popcorn
Working quickly, drizzle the warm vinegar mixture evenly over the popped popcorn while gently tossing or folding with two large spoons or by shaking the bowl. Aim for an even, light coating — you can always add more. After the first drizzle, sprinkle the 1.5 tsp fine sea salt and the optional 0.5 tsp extra finishing salt (if desired) evenly over the popcorn, tossing to distribute. If using powdered malt vinegar, you can add a little more to taste. Taste and adjust: add up to an additional 1/2–1 tsp fine salt if you prefer stronger saltiness.
Crisp the popcorn (optional)
To remove any slight dampness and make the popcorn crisp again, spread the seasoned popcorn in a single layer on a baking sheet and bake in a preheated 250°F (120°C) oven for 8–10 minutes, stirring once halfway through. Remove and let cool for a couple minutes before serving — the popcorn will crisp as it cools.
Finishing & Serving
Taste and finish: if desired, sprinkle a pinch more finishing salt or a small additional dusting of powdered malt vinegar for extra tang. Serve immediately in a large bowl. Store any leftovers in an airtight container at room temperature for up to 1 day (note: popcorn will lose crispness over time).
