Belgian Beer Syrup
Reduce beer into syrup
Combine 1 cup Belgian-style ale and 1/2 cup granulated sugar in a small saucepan over medium heat.
Bring to a gentle simmer, stirring occasionally to dissolve the sugar. Keep simmering gently (do not boil vigorously) until the volume reduces by about half and the mixture becomes syrupy — approximately 12–18 minutes. Skim any foam that forms on top.
Remove from heat and let cool to room temperature. The syrup will thicken further as it cools. Strain through a fine mesh if you want a clearer syrup. Makes roughly 1/3 cup syrup; store refrigerated up to 2 weeks in a sealed jar.
Cocktail Assembly
In a mixing glass, add 2 oz rye whiskey, 1/2 tsp Breckenridge aromatic bitters, 2 dashes Angostura bitters and 1/2 tsp (about 2.5–3 ml) Belgian beer syrup. Note: adjust syrup to taste — 1/2 tsp yields a balanced, spirit-forward drink; increase to 3/4–1 tsp if you prefer a sweeter profile.
Fill the mixing glass with large ice cubes and stir briskly for 20–30 seconds (about 15–20 full strokes) until well chilled and properly diluted (about 20–25% dilution overall is typical for stirred cocktails).
Discard ice from the chilled serving glass and place a single large ice cube or sphere in it.
Strain the chilled cocktail into the prepared rocks glass over the large ice.
Express oils from the lemon peel over the drink by holding peel with the outer (yellow) side down above the glass and giving it a sharp squeeze to release the oils, then rub the peel around the glass rim and drop it into the drink as garnish. Alternatively, use an orange twist if you prefer a sweeter citrus note.
Optionally add a final single dash of Angostura bitters on top for aromatics, and/or a light spray of the Breckenridge bitters if you have an atomizer. Serve immediately.
