Make the dry mix
In a shallow wide bowl or rimmed baking sheet, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/4 tsp cayenne, 1/2 tsp black pepper, and 1 tsp kosher salt until evenly combined.
Make the wet mix
In a second shallow bowl, beat 2 large eggs with 1/2 cup whole milk and 1 tsp Worcestershire sauce until smooth.
Working in batches of about 8–10 mushrooms (do not overcrowd), dredge each mushroom first in the dry flour mixture, shaking off excess, then dip into the wet egg mixture, allowing excess to drip back into the bowl, then return to the dry mixture and press lightly so a thin, even coating adheres. Place coated mushrooms on the prepared tray and let rest 5 minutes so the crust sets; this reduces coating loss in the oil.

Heat oil
Pour about 1–2 cups neutral oil into a heavy-bottomed skillet or small Dutch oven so the oil depth is about 1 to 1 1/2 inches. Heat over medium-high until the oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small breadcrumb — it should sizzle and turn golden in about 40–50 seconds.
Fry mushrooms
Carefully add 6–8 coated mushrooms to the oil without crowding (they should have space to float). Fry, turning occasionally with a slotted spoon or spider, until golden brown and crisp, about 3–4 minutes total depending on size. Larger mushrooms may need 4–5 minutes. Keep the oil temperature between 325–350°F; lower if browning too quickly.
Use a slotted spoon to transfer fried mushrooms to a wire rack set atop a baking sheet (or paper towels) to drain. Immediately season lightly with a pinch of salt while still hot. Repeat with remaining mushrooms, letting the oil come back to temperature between batches.
