Preparation
Make the Dough
In a large mixing bowl, combine flour, sugar, yeast, and salt. In a separate bowl, mix warm milk, warm water, melted butter, vanilla extract, and the egg. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for about 5 minutes until smooth.
First Rise
Cover the dough with a clean towel and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Shape the Beignets
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about 1/4 inch thick and cut into squares or rectangles of about 2 inches each.
Second Rise
Place the cut squares on a floured baking sheet, cover with a towel, and let them rise for another 30 minutes.
Fry the Beignets
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the beignets in batches until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.
Serve
Dust the warm beignets with powdered sugar before serving. Enjoy!
