Prepare the Chips

Peel and cut the potatoes into thick slices. Rinse them in cold water and pat them dry with a towel.

Fry the Chips

In a deep pot, heat the beef fat over medium-high heat. Once hot, fry the chips in batches until golden and crispy. Remove and drain on paper towels.

Make the Batter

In a bowl, mix together the flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth.

Fry the Fish

Heat more beef fat in the pot. Dip each cod fillet into the batter, allowing excess to drip off. Carefully place in the hot fat and fry until golden brown. Remove and drain.

Prepare the Tartar Sauce

In a bowl, combine mayonnaise, chopped pickles, capers, and lemon juice. Mix well and adjust seasoning if necessary.

Make the Mushy Peas

In a pot, boil the peas until tender. Drain and mash with butter and salt until smooth.

Serve

Plate the fish and chips alongside a generous dollop of tartar sauce and mushy peas. Enjoy your meal!
