Gnocchi and Sauce
Method
Preparation and Cooking
Shape the Gnocchi
On a floured surface, roll the dough into logs about 1 inch in diameter. Cut into 1-inch pieces and shape with a fork for ridges. Place on a floured tray.
Prepare the Sauce
In a saucepan, melt butter over medium heat. Add the seaweed and sauté for 1-2 minutes. Pour in the white wine and simmer until reduced by half.
Add Cream and Crab
Stir in the heavy cream, crab meat, and dill weed. Cook until heated through. Season with salt and pepper to taste.
Cook the Gnocchi
Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
Combine and Bake
In a baking dish, combine the cooked gnocchi with the sauce and smoked salmon, then sprinkle with Parmesan cheese and breadcrumbs. Bake at 180°C (350°F) for 20 minutes or until golden.
Serve
Remove from the oven and let cool for a few minutes. Serve hot, garnished with additional dill if desired.
