Prepare the Beef Tartare

Finely chop the Braveheart Beef tenderloin and mix it with horseradish, toasted shallots, salt, and black pepper. Form into a small mound and create a small indentation in the center for the egg yolk.

Make the Goat Cheese Brûlée

In a bowl, mix goat cheese, cream, sugar, and egg whites until smooth. Pour the mixture into a small baking dish and bake at 180°C (350°F) for 10 minutes or until set. Remove from oven, cool slightly, then sprinkle sugar on top and caramelize with a torch until golden.

Prepare the Lemon and Chive Béarnaise Sauce

In a saucepan, melt butter and sauté shallots until translucent. Add white wine vinegar and reduce slightly. In a bowl, whisk egg yolks and gradually add the melted butter mixture while whisking continuously. Stir in fresh chives, salt, and pepper to taste.

Assemble the Dish

Place the beef tartare on a plate, top with the goat cheese brûlée, and serve with a side of lemon and chive béarnaise sauce.
