Method

Cocktail

  1. 1

    Build and shake

Add dark rum, blue curaçao, pineapple juice, fresh lime juice, simple syrup, and Angostura bitters into a cocktail shaker. Fill the shaker halfway with cracked ice. Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

  2. 2

    Prepare glass

Fill a highball or Collins glass with fresh cracked ice (about 3/4 full) to keep the drink cold and to create layered presentation.

  3. 3

    Strain and serve

Double-strain the shaken mixture over the ice in the prepared glass using a cocktail strainer (and a fine mesh strainer if you want to remove small ice shards). The blue curaçao will tint the drink a bright blue-green; slight separation may occur—leave as is for visual appeal.

Garnish & Finish

  1. 4

Skewer the maraschino cherry and pineapple wedge (or place them on the rim). Float the lime wheel on top or place it on the rim. Optionally, give the garnish a light squeeze of lime over the surface to release aroma. Serve immediately with a straw.
