    Prepare

    Preheat the oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving an overhang to lift the brownies out later. Lightly grease the parchment.

    Melt chocolate and butter

    Place the chopped bittersweet chocolate and butter in a heatproof bowl set over (not touching) simmering water (double boiler). Stir occasionally until fully melted and smooth, about 5–7 minutes. Alternatively, microwave in 20-second bursts, stirring between, until melted.

    Mix sugar and eggs

    Remove the chocolate-butter mixture from heat and let cool 2–3 minutes. Whisk in the granulated sugar until incorporated. Add the eggs one at a time, whisking vigorously after each addition until the mixture is glossy. Stir in the vanilla extract.

    Add dry ingredients

    Sift or whisk together the all-purpose flour, unsweetened cocoa powder, and fine salt. Fold the dry mixture into the chocolate mixture with a rubber spatula just until no streaks of flour remain. Do not overmix. If using nuts, fold in the chopped walnuts or pecans now.

    Bake

    Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for 20–25 minutes, until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs (avoid baking fully dry to keep fudgy texture).

    Cool

    Remove from the oven and cool the pan on a wire rack for at least 30 minutes. Use the parchment overhang to lift the brownie slab from the pan. For easier slicing and serving warm with ice cream, cool 15–20 minutes; for cleaner slices, chill 1–2 hours.

Assemble with ice cream & toppings

    Slice warm or cooled brownies into 6–8 squares, depending on desired serving size (this recipe yields about 6 generous or 8 moderate servings). Place a brownie on each serving plate.

    Scoop about 1 large/2 small scoops (roughly 80 ml per serving for 6 servings) of vanilla ice cream and set on top of or beside each brownie. If the brownie is warm, the ice cream will soften and create a pleasing contrast.

    Drizzle 1–2 tablespoons (15–30 ml) of hot fudge or chocolate sauce over the ice cream and brownie. Sprinkle toasted chopped nuts and a light pinch of sea salt flakes over each portion if using. Garnish with fresh berries or a sprig of mint if desired.
