Pickled Red Onion
Prepare the quick pickle: combine apple cider vinegar, water, sugar, and salt in a small saucepan and bring to a gentle simmer, stirring until sugar and salt dissolve.
Place the thinly sliced red onion in a heatproof bowl or jar. Pour the hot brine over the onions, pressing them down so they are submerged. Let cool to room temperature, then cover and refrigerate for at least 30 minutes (can be made up to 24 hours ahead).
Toasted Pistachio & Finishing Oil
Remove from heat and let cool slightly, then roughly chop the pistachios. Reserve about 1 tablespoon of chopped pistachio for sprinkling on top; keep the rest for garnish and texture.
Mix the extra-virgin olive oil with the coarse sea salt and set aside to drizzle over the finished spread.
Whipped Feta Spread
Bring cheeses to room temperature for 20–30 minutes to ease blending.
In a food processor or high-speed blender, combine the drained feta, softened cream cheese, Greek yogurt, minced garlic, lemon juice, 2 tablespoons olive oil, and freshly ground black pepper.
Pulse and then blend until very smooth and airy, scraping down the sides as needed. If the mixture is too thick, add up to 1 tablespoon more olive oil or 1 teaspoon water to reach a spreadable, whipped consistency.
Taste and adjust seasoning: add a pinch of salt only if needed (feta can be salty) and more black pepper or lemon juice to brighten.
Herb & Garnish Mix
Combine the chopped oregano, rosemary, parsley, basil, and rinsed capers in a small bowl. Gently toss to distribute evenly.
Fold about half of this herb mixture into the whipped feta carefully to create herbed ribbons in the spread, reserving the rest to top the finished dish.
Assembly & To Serve
Warm the country bread: slice and either toast briefly under a broiler or warm in a 350°F (175°C) oven for 5–7 minutes until just warm and slightly crisp at the edges.
Spread the whipped feta onto a shallow serving bowl or plate, creating a shallow well in the center with the back of a spoon.
Spoon the reserved herb mixture over the whipped feta, scatter the toasted chopped pistachios on top, and arrange pickled red onion slices over or alongside the spread.
Drizzle the reserved finishing olive oil lightly over everything and finish with a crack of fresh black pepper and the reserved tablespoon of pistachio. Sprinkle a small pinch of coarse sea salt if desired.
Serve immediately with warm country bread alongside for spreading.
