1. Sauté the Aromatics

In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.

2. Add the Peas

Stir in the fresh peas and cook for an additional 2-3 minutes.

3. Add Broth and Simmer

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes, or until the peas are tender.

4. Blend the Soup

Remove the pot from heat and let it cool slightly. Use an immersion blender or transfer the mixture to a blender. Blend until smooth.

5. Add Cream and Season

Stir in the heavy cream, and season with salt and black pepper to taste. If the soup is too thick, you can add a little more broth or water.

6. Chill the Soup

Transfer the soup to a container and refrigerate for at least 2 hours, or until well chilled.

7. Serve

Ladle the chilled pea soup into bowls and garnish with chopped fresh mint before serving.
