Ravioli & Coating

Method

Ravioli & Coating

1

Prepare ravioli

If using frozen ravioli, thaw in the refrigerator until pliable or run under cold water just until separated and pat dry thoroughly with paper towels. For fresh ravioli, blot gently to remove excess moisture. Drying prevents the coating from becoming soggy.

2

Set up dredging stations

Place the flour in a shallow bowl. In a second shallow bowl, beat the egg with the milk until smooth. In a third shallow bowl, combine the breadcrumbs, grated Parmesan, dried Italian seasoning, salt, and black pepper; mix evenly.

3

Coat ravioli

Working one at a time, lightly toss each ravioli in the flour, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the breadcrumb mixture to coat all sides. Place coated ravioli on a plate and let rest 5 minutes to help crumbs adhere. Repeat for all 6 pieces.

Cooking & Finishing

4

Heat oil

Pour vegetable oil into a skillet so it reaches about 1/8–1/4 inch depth. Heat over medium heat until shimmering and a small breadcrumb sizzles gently (about 325–350°F / 160–175°C).

5

Fry ravioli

Carefully add the coated ravioli to the hot oil in a single layer without crowding (you may need two batches; for 6 pieces one batch should fit). Fry 1.5–2.5 minutes per side, turning with tongs, until golden brown and crisp. Total frying time will vary with ravioli thickness; cook until hot through and crisp outside.

6

Drain & finish

Transfer fried ravioli to a paper towel–lined plate to drain excess oil. Immediately dot with the butter so it melts over the hot ravioli, then sprinkle with chopped parsley. If desired, squeeze the lemon wedge lightly over the pieces for brightness.

7

Serve

Arrange 6 toasted meat ravioli on a small plate with 1/4 cup warm marinara or chosen dipping sauce on the side. Serve hot as a side or appetizer.
