Measure and mix cheeses
Measure out shredded mozzarella, shredded cheddar and grated Parmesan into a medium bowl. If using a soft cheese (feta or goat), measure it separately. Gently toss the shredded cheeses together so they are evenly distributed.
Season the blend
Sprinkle the black pepper and dried oregano over the shredded blend and toss lightly again so the seasonings are distributed. Do not overmix if you will be melting the cheese — you want pockets of each cheese for flavor variety.
Apply cheese
Evenly scatter the mixed cheeses across the item you are topping. If using soft cheese, dot it on top in small spoonfuls so it melts and creates tangy pockets. For a more even melt, press the shredded cheese lightly into the surface.
Melt or bake
If you are melting on a hot surface (pizza) or baking (casserole, gratin), follow the base recipe's cooking temperature and time. As general guidance: bake at 375–425°F (190–220°C) until cheese is melted and bubbly and edges are golden, typically 5–15 minutes depending on the dish and oven. Monitor closely to avoid burning.
Finish and serve
Remove from heat when cheese is melted and lightly browned to your preference. Let stand 2–3 minutes to settle. If desired, finish with an extra pinch of oregano or a light grind of black pepper. Serve immediately.
