Method
Prep fruit
- 1
Hull and taste
Rinse the strawberries, remove the green caps (hull) and pat dry. Taste one strawberry; if very tart, use 1 tablespoon sugar now and reserve the other for blending if needed.
- 2
Measure and squeeze fresh limes to get 3 tablespoons (about 1-2 limes depending on size).
Blend
- 3
Combine ingredients
Place hulled strawberries, 3 tablespoons fresh lime juice, 2 tablespoons granulated sugar, and 1/2 cup cold water into a high-speed blender.
- 4
Add ice
Add 2 cups of crushed ice to the blender. If you only have large cubes, use them but pulse and add a little extra water (1-2 tbsp) if the blender strains.
- 5
Blend to smooth
Secure the lid and blend on high until the mixture is completely smooth and thick, about 30–60 seconds. Stop and scrape down the sides once, then blend again to ensure even texture. The consistency should be thick and slushy — like a frozen daiquiri.
- 6
Adjust sweetness & texture
Taste carefully. If it needs more sweetness, add up to 1 tablespoon simple syrup or an additional tablespoon granulated sugar and blend for 5–10 seconds. If too thick, add 1–2 tablespoons cold water and pulse to combine.
Serve
- 7
Pour the virgin strawberry daiquiri into chilled cocktail glasses or a tall glass, dividing evenly (see servings).
