Preheat and season
Preheat oven to 400°F (200°C). Pat the pork loin dry with paper towels. Mix kosher salt, black pepper, chopped rosemary and thyme. Rub the pork all over with olive oil, then evenly coat with the herb-salt mixture. Tuck the smashed garlic cloves against the loin or pierce and insert for aromatics.

Sear
Heat a large ovenproof skillet (cast iron preferred) over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. When shimmering, place the pork loin fat-side down and sear without moving for 2–3 minutes until a deep golden crust forms. Turn and sear remaining sides 1–2 minutes each to create an even color.

Roast
Transfer the skillet to the preheated oven. Roast at 400°F (200°C) until internal temperature reaches 135°F (57°C) for medium (carryover will rise to 140–145°F), about 20–30 minutes depending on thickness. Use an instant-read thermometer inserted into the center for accuracy.

Rest
Remove pork from the oven and transfer to a cutting board. Tent loosely with foil and rest for 10–15 minutes. Resting allows juices to redistribute and makes slicing easier.

Roast vegetables with pork
While the pork roasts, arrange the halved onion (cut side down if halved), carrot chunks, celery and smashed garlic in the same roasting pan or on a separate sheet. Drizzle lightly with a teaspoon of olive oil and season with a pinch of salt and pepper. If using the skillet with pork, add vegetables around the loin for the last 20–25 minutes of roasting so they caramelize and pick up pan flavors.

Deglaze pan
When pork is removed to rest, place the skillet with drippings over medium heat on the stove. If pan is too hot, reduce heat. Add the white wine (or vermouth) to deglaze, scraping the browned bits (fond) from the bottom with a wooden spoon. Allow the wine to reduce by about half, 2–4 minutes.

Simmer jus
Add the roasted vegetables, chicken stock, bay leaf and thyme sprig to the deglazed pan. Bring to a gentle simmer and cook 6–8 minutes to meld flavors. If you used a separate roasting sheet, transfer veggies and any collected juices into a saucepan to continue.

Strain and finish
Strain the liquid and solids through a fine-mesh sieve into a clean saucepan, pressing on solids to extract flavor. Discard solids and return strained liquid to low heat. Whisk in the cold diced butter, one piece at a time, to slightly thicken and add gloss (monter au beurre). Taste and adjust seasoning with fine sea salt and freshly ground black pepper to taste. Keep warm.

Carve and serve
Thinly slice the rested pork loin across the grain into 1/4–1/2" slices. Arrange on a platter or portion plates and spoon the warm natural jus over or on the side. Garnish with a few fresh thyme leaves or chopped rosemary if desired.
