Prep fruit

Wash strawberries, hull and halve if large. Peel, pit and slice peaches. Core and chop pineapple into roughly 1-inch pieces. Measure and have shredded coconut or coconut cream ready.

Divide the prepared fruit into three even portions (approximately 1/3 cup of each fruit per portion). This helps layer or blend by color for the rainbow effect.

Layering, blending & sweetening

Make the red (strawberry) layer

Place one portion of strawberries in a blender with 2 teaspoons grenadine, 2 tablespoons fruit punch, and 1 teaspoon lime juice. Add a small splash (1–2 tbsp) of coconut water or fruit punch if needed to help blend. Pulse until smooth but still thick. Taste and add up to 1 teaspoon simple syrup or honey if not sweet enough. Pour into a freezer-safe shallow dish or into serving glasses and spread to an even layer about 1/2 inch thick. Freeze 20–30 minutes to set but not fully harden.

Make the peach layer

Blend one portion of peaches with 2 tablespoons fruit punch, 1 tablespoon shredded coconut (or 1 tablespoon coconut cream), and 1 teaspoon lime juice until smooth and thick. Adjust thickness with small amounts of coconut water if necessary. Spoon or pour this peach puree over the semi-set strawberry layer, smoothing gently. Freeze another 20–30 minutes to set.

Make the pineapple-coconut layer

Blend one portion of pineapple with the remaining shredded coconut (or 2 tablespoons coconut cream), 2 tablespoons fruit punch, and a pinch of grenadine (just a few drops to warm color) until thick and smooth. Add up to 1 tablespoon coconut water if too stiff. Spoon this mixture over the set peach layer and smooth. Freeze for 30–45 minutes until the layers hold together.

If you prefer fully frozen solid bars or slices, freeze for 3–4 hours or overnight. For scoopable frozen treats, freeze 1–2 hours until firm but scoopable. If assembling in glasses, you can alternate smaller layers for a taller rainbow effect and partially freeze between layers as above.

Final assembly & serving

Once set to your liking, remove from freezer 5 minutes before serving to soften slightly. If frozen in a dish, slice into bars or wedges. If in glasses, garnish each serving with a drizzle of the remaining grenadine (about 1 teaspoon per serving) to intensify red streaks.

Top with a sprig of fresh mint and an optional squeeze of lime. Serve immediately with a spoon or fork.

Store leftovers tightly covered in the freezer for up to 1 week. Let sit at room temperature 5–10 minutes before scooping or slicing.
